No-Bake, Delish Energy Bites.

So it was Sunday.  A great day to recoup, re-energize and get ready for nailing the week ahead!  I had been looking for a great, nutrient packed snacks for awhile and I’ve tried a bunch.  Some were WAY too time intensive, others just tasted yucky…but this, this one is a serious home-run in our house!  

These were no-bake.  They do require a bit of time in the fridge before making them into perfect little bite-sized balls but overall, it was a fast, quick prep and they were in our bellies in no time!  As always, feel free to modify as you need.

Ingredients:

  • 2 cups Organic Gluten-free Oats
  • 1 cup Organic Peanut Butter
  • 1/4 cup Chia Seeds
  • 1 cup Shredded Coconut
  • 3 Tbsp Raw Honey (melted)
  • 2 Tbsp Expeller-Pressed Coconut Oil (warmed)
  • Handful of White Chocolate Chips

Process:

Combine all ingredients above and stir until blended.  Stick in the fridge for 15-20 mins.  Remove and form into little bite-sized balls (this was Noah’s favorite part!).  Enjoy! 

IF you have any left, store in an air-tight container in the fridge for up to a week.
