Fabulous Quinoa Salad

This is an amazing salad, my go-to for all family gatherings – you’d be surprised that almost EVERYONE loves it! The quinoa provides much more protein and nutrients than a typical pasta/potato salad and the goat cheese gives it that “melt-in-you-mouth” effect. Yumminess!

  • 4 cups cooked quinoa (see below for cooking details)
  • 1 Cucumber, diced
  • 3 large vine Tomatoes, diced
  • 3 Carrots, chopped in food processor or by hand
  • ½ Red onion, chopped
  • Fresh cilantro, to taste
  • Balsamic Vinegar and Olive Oil (need enough to coat the entire salad) or use Italian dressing if you prefer
  • 1 8oz block Goat cheese, crumbled
  • Sunflower seeds, garnish

How to Cook Quinoa:

  • 1 cup dry quinoa yields 3 cups cooked
  • Use 1 ½ cup dry, rinsed quinoa
  • 3 cups water (dash of salt)
  • Boil on medium for 15 minutes
  • Let stand for 5 mins
  • Fluff with fork!
